Lisa and I got new cell phones today. Hers broke at family camp and she has been using the skype phone for a week. My treo was falling to pieces (literally), and drops every call.
These pictures were taken on Lisa's new phone. 2 megapixels! (but no flash). Still pretty cool for a free phone.
The kids have been having a blast in their little kiddie pool.
recipe: double chocolate vegan cookies
These are VERY good. The only one who could tell they are vegan was Emily. She didn't like them at first, but eventually warmed up to them.
Ingredients
3/4 cup canola oil
1 and 1/2 cups sugar
2 teaspoons vanilla
1 tablespoon + 1 teaspoon whole flax seeds (optional, but healthy and good)
1/2 cup soymilk (you can use real milk if you must, but don't call them vegan if you do)
2 cups all purpose flour
3/4 cup dutch processed cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chocolate chips
Directions
Preheat oven to 350 F.
Grind the flax seeds on high in a blender until they become a powder. Add soymilk and blend for another 30 seconds or so. Set aside.
In a large bowl sift together flour, cocoa, baking soda and salt.
In a seperate large bowl cream together oil and sugar. Add the flax seed/soy milk mixture and mix well. Add the vanilla.
Fold in the dry ingredients in batches. When it starts to get too stiff to mix with a spatula, use your hands until a nice stiff dough forms. Add the chocolate chips and mix with your hands again.
Roll dough into 1 inch balls and flatten into a disc that's about 1 1/2 inches in diameter. Place on an ungreased cookie sheet about an inch apart.
Bake for 10 minutes. Remove from oven and let cool for about 5 minutes, then set them on a wire rack to cool completely.

WASHINGTON (Reuters) -- A U.S. consumer group called for an urgent Food and Drug Administration review of the safety of aspartame on Monday, but the FDA said there was no immediate need to do so despite a new study showing the sweetener may cause cancer.
Italian researchers published a new study last week that showed aspartame -- widely used in soft drinks -- might cause leukemia, lymphoma and breast cancer in rats.
"This is the second study by the same lab showing that aspartame causes cancer in rats,"Center for Science in Public Interest executive director Michael Jacobson said in a telephone interview.
Aspartame is used mostly in soft drinks but is also sold in packets to use in coffee, tea or on food. "People can easily avoid products using Nutrasweet or Equal and keep these products away from kids," Jacobson added.

We just got back from a week at aspen grove, right next to Sundance. We all had a great time. Lisa's parents came too. We stayed in a little cabin in the woods with a couple bedrooms and a loft (no bathroom). It was just up the hill from the fishing pond, and a few minute hike from the main lodge and dining hall.
We checked in on Saturday, went for a swim, then ate dinner. Meals were a highlight for the kids because it was cafeteria/buffet style, so they would run ahead, grab a tray, and help themselves to a little of everything. They'd even mix themselves some strange drinks. There was a campfire program that night.
We had church outside on Sunday, the kids had activities with their groups in the afternoon, then we had a fireside that night.
Starting on Monday, the kids went with their groups for a few hours in the morning, then again in the afternoon. Each day had a them, like 'pirate day' and 'harry potter day'. They went swimming every day, and one day they went on a hike up to the falls. There were tournaments for pretty much every sport you can imagine (badminton, tennis, raquetball, golf simulator, archery, basketball, shuffleboard, ping pong, paintball, air rifles, etc etc.). Lisa competed in shuffleboard, and her mom did shuffleboard and pingpong. Lisa & I did mixed doubles tennis, but after winning the first match, we let the next couple move on because we couldn't find a time to play (and we were getting worn out). I took the title for singles tennis and raquetball.
There were a couple good speakers, one was the CEO of Anasazi foundation, and an Arbinger Institute facilitator. He talked about parenting, marriage, and 
how to have a better attitude towards life. The next speaker was a psychologist from BYU who spoke about parenting.
We checked out board games with the kids, took them fishing, played minigolf, went swimming. They had family tournaments with little games out on the fields. Lisa's Dad won the prize for being the oldest to go down the big slip and slide.

We ate our way through St Martin. The French side is known for its gourmet French restaurants.
We ate: shrimp, 5 flavors of hot and cold chocolate, a tasting of 4 soups (pea with shrimp, french onion, cold pumpkin coconut, and lobster bisque) and a vegetarian tasting plate along with quite a few other yummy things.

We stayed on the French side of St Martin this time - at the Grande Case Beach Resort.
We had a two story two bedroom unit right on the water (they upgraded us).

As they say, location is everything. Anse Chastanet, which sits right around the corner from the twin pitons that define this island nation, has the lion’s share of St. Lucia’s lush, shallow snorkeling right off its doorstep. Color rules here: Azure vase sponges battle it out for space with brilliant sea fans. Gangs of blue tangs and fanciful creole wrasse roam the reef. Striking goldspotted and sharptail eels slither in the crevices among seahorses and spotted drums. There’s even a boat drift snorkel over coral gardens farther afield.
