Slightly Reduced Guilt Chocolate Chip Cookies




















These are good. No one will ever know there is no butter or trans fat. These are NOT low calorie, and definitely not going to help you lose weight. But they won't clog your arteries as much as other recipes...

1/4 cup white sugar
1/2 cup brown sugar
1/2 cup canola oil
1 tsp. of ground cinnamon
1 tsp. vanilla extract
1 Egg
1 cup flour (you may need a little more, just add some until you get the right consistency.. )
1/2 cup walnuts
1/2 tsp. baking soda
1/2 tsp. salt
6 oz. chocolate chips


Preheat oven to 350 degrees F. Put oil in a large mixing bowl. Add the sugars, salt, cinnamon and vanilla and mix well. Add the egg and continue to mix well. Mix in the dry ingredients and stir in the chocolate chips. Drop teaspoons on lightly greased cookie sheets and bake 8 - 10 minutes, until golden brown. Place carefully on cooling rack.



French Loaves

These aren't the kind of baguettes you'll find in france, but they look nice and taste good. I'd call it an American Baguette...

Dissolve 2 pkg dry yeast in 1/2 c warm water. Let stand 10 minutes.
Combine in large bowl:
2 c hot water, 3 T sugar, 1 T salt, 5 T oil, 3 c flour
Stir together, then add 3 C flour. Let rest 10 minutes. Stir again, repeat 7 more times. Turn dough onto floured board, knead, divide dough in 1/2. Roll each half into a baguette shape, slash the top with a knife diagonally, brush with beaten egg white, sprinkle with sesame seeds, let rise 30 minutes. Bake at 400 degrees for 35 minutes until golden brown.

"Popular"

Amanda went to a music camp this week that a teenage girl in the ward put on. A couple hours a day for a week, costs $20, then they performed a couple songs at the end. Here's Amanda singing "Popular" from Wicked.

The house is just about done. It is painted, and the flooring is well underway. That is walnut flooring in the picture above, it's just dusty.
The cabinets will be installed soon, and work will start a 3 different back decks. The walnut is for the island, and the colorful one is for the small bathroom.


The backyard is coming along. There's a stone staircase up to the flat sideyard. It is nice and cool up there compared to Salt Lake.

Lisa is in Nevada for 4 days, so I've been staying busy with the kids. Here they enjoying ikea's 99 cent kids meals. Mac & cheese and lingonberry juice..

We had a picnic/campfire up at Moss Ledge in Big Cottonwood Canyon on Friday night. One of our friends was startled by a rattlesnake slithering across the path, so we all went to take a closer look.

Dallin's golf camp ended today and they gave out awards for the skills
competition. They called out 2nd through 5th place, then announced
"the 1st place winner is Dallin Robison"

We took a day break at our one-year mark and stayed at the Jade Mountain resort in St Lucia. It was amazing. I have never seen such a beautiful place! Check out this slideshow of pictures.
